Pizza With Broccoli and Bechamel Sauce

Pizza is my one of the favorite dishes I make almost every weekend and today I made pizza with broccoli rabe which is a perfect way to have your favorite food with lots of greens which makes it more healthier. Pizza with white-sauce which is different in taste and the sweet smell of nutmeg adds more to its taste.

Makes: Two 10-12 inch pizzas

INGREDIENTS:
FOR THE DOUGH

All-purpose flour:3 cups
Salt:1 tsp
Sugar:1 1/2 tsp
Dry yeast:2 Tbs
Lukewarm water: 1 1/2 cup
Semolina flour for dusting

FOR TOPPINGS:
White Sauce: 1 1/2 cup
Broccoli rabe:2 cup
Fresh mozzarella:1 cup
Dried Basil leaves:1/2 tsp cup

INSTRUCTIONS:

FOR THE DOUGH:

  1. In a large bowl add sugar, yeast and the lukewarm water. Leave the mixture until all the bubbles come to the top of the milk.
    Start adding olive oil, salt, all-purpose flour, and mix for about 5 minutes.
  2. Knead the mixture on a flour-dusted surface by hand or (by using an electric mixer) for about 7 to 10 minutes till the dough becomes smooth.
    Place the dough in a greased bowl and cover and let it sit for about 1 1/2 hour until it’s double the size of the dough.
  3. Preheat the oven to 425 degrees F. Cut the dough into four parts and roll it around with the help of a rolling pin and transfer it to the semolina dusted Pizza stone/pan keeping an1/2 inch thick on the sides.
  4. Spread bechamel sauce evenly, add cheese and broccoli rabe accordingly. Bake for about 20-25 minutes. Serve hot and enjoy!

Bechamel Sauce:
Ingredients:
Butter:1 stick
All-purpose flour: 2 1/4 tsp
Whole milk:2 cups
Pinch of ground nutmeg

  1. Boil one-third of milk on a medium saucepan. Make tiny pieces of the butter stick and add it to the boiling milk. Stir it for some minutes till the butter melts. Add all-purpose flour to the remaining milk in a small bowl and add it to the butter mixture. Finally, add salt to the mixture and stir continuously to avoid sticking to the bottom of the pan. The Sauce is done when it comes to the consistency of a sauce. Let it cool for some minutes and then sprinkle the nutmeg powder on top. This bechamel sauce is good for any pizza recipe that can be stored in a refrigerator for up to a week.

Broccoli Rabe
Ingredients:
Fresh broccoli rabe washed and trimmed: 1 cup
Salt:1 tsp
Water: 2 cups
Instructions:

  1. Bring water to boil in a medium saucepan. Add salt and broccoli. Blanch the broccoli for about 1 minute till tender and drop the broccoli’s into the cold water, drain and keep it aside.
    Heat olive oil in a saucepan, add garlic to it and saute for five minutes. This broccoli rabe can be used in any recipe as a side dish.
