Semolina Cake(Eggless)

Today I am making this protein-rich Semolina cake with raisins. It turned out so fluffy and tasty like the regular flour cakes. Semolina is a kind of coarse flour made especially from durum wheat which is full of nutrients.

INGREDIENTS:

Semolina: 1 cup

Sugar: 1/2 cup

Unsalted butter: 1/2 cup

Baking powder:1 tsp

Baking soda:1/2 tsp

Yogurt:1/2 cup

Whole milk: 1/2 cup

Raisin:1/2 cup

Vanilla essence:1 tsp

INSTRUCTIONS:

  1. Mix all the dry ingredients and keep, it in a separate bowl. In a separate bowl mix butter and sugar for about 5 minutes using an electric mixer. 
  2. Add yogurt, Vanilla essence, semolina, and finally milk to the mixture. Leave the mixture for 20 minutes covered. if the mixture will be a little thick, then add 2 tbsp of milk. 
  3. Transfer the batter to a greased 6-inch pan, add raisin to the mixture and bake for about 20-25 minutes till golden brown. Insert a toothpick in the middle and if it comes out clean, the cake is done. Let it cool and enjoy!
