What could be a better way than to start your day with a healthy meal?
One of my favorite salads is the sprouted lentil salad with lots of vegetables that is very quick and easy to make.
Sprouted lentils are healthy and they contain proteins, less carbs and not many calories. Sprouted lentils are very easy to make and
if you are short in time, store bought lentils can also be used.
Ready in: 20 minutes

INGREDIENTS:
Sprouted Lentil:2 cup
Diced red bell pepper:1/2 cup
Diced green bell pepper:1/2 cup
Diced squash:1/2 cup
Sliced Mushroom: 1 cup
large boiled Egg :2
FOR SALAD DRESSING:
Fresh lime juice : 2 tbs
Salt:1/4 tsp
Extra virgin olive oil:2 tbs
DIRECTIONS:
- In a medium cooking pan, saute the red bell pepper,green bell pepper, squash and mushrooms.
on a low heat for about 2 minutes. You may use more vegetables but these are the ones I used.
2.In a separate bowl whisk extra virgin olive oil,salt and the lime juice to create a fresh taste.
Mix all the veggies along with the sprouted lentils to the salad dressing and let it set aside for 10 minutes.
3.Serve with eggs (or any meat of your choice).

HOW TO MAKE SPROUTED LENTILS:
Sprouted lentils are very tasty and are also easily made.
Using one cup of whole lentils add two cups of water, wash the whole lentils and soak in the water overnight.
Drain the water and leave it for one and half day lightly covered with a wet muslin cloth or wet tissues.
Sprouts will begin to appear. Sprouted lentils can be stored for upto 1-2 weeks fresh in a refrigerator.
