Stuffed Bell Pepper with Rice and Shrimp

We use bell peppers almost in every recipe in our day to day life. Today I am making something new with these colorful bell peppers. I have stuffed the bell peppers with spicy tomato rice and shrimp. They taste divine. So let’s start cooking!

For this recipe, I have blanched bell peppers so that they won’t lose their color and saggy. I have used the cooked rice and this makes the recipe more delicious with every bite . You can also cook the spices and tomato sauce along with the rice if you want.

INGREDIENTS:

Grated Mozzarella: 1 cup

Red bell peppers:3

Green bell peppers:3

Shrimp(deveined and washed): 1 lb

Tomato sauce: 1 cup

Long Grained Rice(cooked): 3 cups

Onion(Chopped): 1/2 cup

Garlic(Chopped): 2 Tbsp

Salt: 1 tsp

INSTRUCTION:

  1. Cut the top of the bell peppers, clean the seeds inside. 
  2. Put some ice cubes in a medium bowl filled with cold water. Bring water to boil in a medium saucepan, dip bell peppers, boil for 2 minutes and transfer it to the bowl filled with ice cubes. Place the bell peppers on a greased cookie sheet.
  3. In a medium saucepan saute garlic, onion, shrimp, tomato sauce, oregano with salt, for about 3 minutes and finally add the rice and gently mix the rice.
  4.  Fill the rice mixture into the bell peppers and sprinkle cheese on the top and bake for about 4 minutes at 350 degrees F.
  5. Enjoy spicy bell peppers!
