Mini Fruit Tart
Fruit tarts are my all time favorites. I love fruit tarts because they are filled with different kind of fruits, custard and nice crispy,crunchy crust at the bottom.Hmm …sounds yummy right? So lets get started!
Total time:60 Minutes
Makes: 6 to 8 mini tarts

FOR CUSTARD

Prep time:5 Minutes
Cook time:5 Minutes
Ready in:15 Minutes

INGREDIENTS:
Sugar:1/4 cup
Cornstarch:2 tbs
Vanilla:1 tsp
Egg yolks :2
Milk:2 cup

INSTRUCTIONS:
1.In a medium saucepan pour milk and half of the sugar and bring it to a boil.
2.In a separate bowl mix egg yolks and remaining sugar along with the cornflour and vanilla essence.
3.Pour the egg yolk mixture to the milk and keep stirring on a low heat for about 5 minutes till its thick and
make sure not to burn at the bottom pan.Let it cool completely.

FOR THE CRUST

Prep time:10 Minutes
Cook time:15-20 Minutes
Total :30 minutes

INGREDIENTS:
All-purpose flour: 1 1/2 cups
Unsalted butter:1 cup
Sugar:1 cup

FOR GLAZE

Apricot jam: 1/2 cup
Water:1/2 Tbs

INSTRUCTIONS:
This crust is really easy to make and can be done in no time.
1.In a large bowl combine unsalted butter(at room temperature),sugar and flour. Using an electric mixer mix for about 10 minutes to form a dough.
2.Remove the dough from the mixer and roll the dough to the sizes of the tart pan. Evenly press the dough on to the top of the greased tart pan.
3.Bake for about 10/15 minutes until the tarts are light golden brown. Remove from the oven and let it cool completely. Fill the tart shell with custard with the help of a piping bag or spoon .
4.Heat apricot jam and water in a saucepan on a low heat for 5 minutes and strain the mixture to avoid any fruit lumps. Keep it in a separate bowl.
5.Now comes the fun part of decorating variety of fruits.Cut the fresh fruits into desired sizes and decorate accordingly. Finally glaze fruits with the help of a brush.
