THAI PINEAPPLE SHRIMP FRIED RICE

This pineapple fried rice is a mix of fruits,veggies and shrimp which gives a nice taste and the sweet aroma of pineapple make it more delicious.

INGREDIENTS:
FOR RICE:
Basmati Rice:1 cup
Water:2 cup
Salt: 1 tsp
Olive oil: 2 tsp

FOR FRIED RICE:
Fresh pineapple:2 cup
Red bell pepper:1 cup
Large eggs:2
Green peas:1/4 cup
Cashew nut:1/4 cup
Low-sodium soy sauce:4 tbs
Tomato paste:2 tsp
Olive oil:2 tsp
Chili sauce:1/2 tsp

INSTRUCTIONS:

  1. Boil two cups of water in a medium saucepan. Once the water starts to boil add rice to it. Cook for about 5 to 10 minutes till its cooked while adding salt and olive oil. Drain the excess water with the help of a colander and set aside. I have used leftover rice which is a great choice for this recipe because the rice doesn’t stick together if it’s cooked ahead of time.
  2. Prepare the sauce by adding soy sauce, tomato paste, chili sauce and salt in a small bowl.
  3. In a separate pan add olive oil and stir fry the shrimp until golden brown. Make sure not to overcook the shrimp at this point. Remove the shrimp. Add olive oil and two eggs to the heated pan and stir continuously to make a scrambled egg.
  4. Saute garlic, onion and the veggies in the pan for about 5 minutes. Add the sauce mix to the pan and mix it well adding gradually pineapple and eggs to it. leave it for 5 minutes to set and the pineapple fried rice is ready to serve.
