Black Beans with Brown Rice

INGREDIENTS:

 Canned 15 ounce Black beans:2

 Brown rice: 1 cup

 Fresh avocado peeled, pitted and sliced: 2

 Vine tomato chopped: 1 cup

 Onion chopped: 1/2 cup

 Olive oil: 2 tsp

 Salt:1/2 tsp

 Garlic powder: 1/4 tsp

 Ground black pepper: 1/4 tsp

INSTRUCTIONS:

  1. Wash the brown rice with clean water. In a medium saucepan add 3 cups of water and bring it to a boil. Add rice, salt, one tsp olive oil to the pan and cook for about 20 minutes. Brown rice takes a little longer to cook. Once it’s cooked, remove from the heat and transfer it to a bowl.
  2.  Rinse the beans thoroughly. In a medium saucepan heat olive oil, gradually add beans, black pepper, garlic powder and salt to it. Saute for 2 minutes and keep it aside.
  3. I normally cut the avocado in the middle all the way, then gently twist to make it half. Then with the help of a spoon remove the pit and slice.
  4. Place the rice, black beans, avocado, tomato, onion on a serving plate, sprinkle lemon juice. Decorate with fresh cilantro n enjoy !
