
Mexican rice is one of the easy and simple recipe which needs a very few ingredients.They are full of flavor and delicious at the same time.

INGREDIENTS:
Canned 15 ounce Black beans:2
Basmati rice: 1 cup
Fresh red bell pepper chopped: 1/2 cup
Vine tomato chopped: 1 cup
Onion chopped: 1/2 cup
Olive oil: 4 tsp
Cumin:1/4 tsp
Salt:1/2 tsp
Corn:1/4 cup
Frozen Peas: 1/4 cup
Tomato paste:4 tbsp
Garlic powder: 1/4 tsp
Ground black pepper: 1/4 tsp
INSTRUCTIONS:
1.Wash the Basmati rice with clean water. In a medium saucepan heat 2 tsp olive oil on low heat.
2.Add chopped garlic, onion ,cumin and fry for about a minute. Add corn, peas, Tomato paste, Basmati rice, salt and fry for about 2 minutes. Add 2 cups of water, and cover the lid on medium heat until the rice is fully cooked. Add the 2 tsp olive oil to the rice and red bell pepper. Remove from the heat and transfer it to a bowl.
3.Rinse the beans thoroughly. In a medium saucepan heat the remaining olive oil, gradually add beans, black pepper, garlic powder,and salt to it. Saute for about 2 minutes and keep it aside.
Place the rice, black beans on a serving bowl.
