Chinese Egg Noodles


Noodles are my all-time favorites. I love to make noodles whenever I am starving, and have very little time to think.
These are really quick and easy to make.

Ingredients:
Egg noodles:1 1/2 cup
Red bell pepper cut in julienne: 1/2 cup
Large onion cut in julienne: 1/2 cup
Fresh mushrooms sliced:1 cup
Garlic /ginger sliced: 2 tbsp
Olive oil: 4 tsp
Soy sauce: 2 to 4 tbsp
Chilly sauce:1 tbsp
Salt:1/4 of tsp
Large eggs: 2
Instructions:

  1. Boil 3 cups of water in a saucepan. Add salt, egg noodles(I have used Kluski Egg Noodles), and 1 tsp olive oil to it. Cook for about 5 to 7 minutes. Drain the water and keep the noodles aside.
  2. Combine 1/8 tsp salt and eggs in a medium bowl and whisk together. Heat 1 tsp olive oil on medium heat. Add the egg mixture to the skillet and stir fry to make scrambled eggs. Transfer the scrambled eggs to a bowl.
  3. Add the remaining olive oil, garlic, ginger, onion, red bell pepper, mushroom to the same skillet and fry for about 5 minutes. Add soy sauce, chilly sauce, the noodles, and the scrambled eggs and mix all gently.
  4. Transfer the noodles to a serving plate and Enjoy!
