I used to think that Madeleines are hard to make with spongy texture but I was wrong. I tried this recipe today, these are quite easy to make, just add all the ingredients and refrigerate for some time and then bake. I added orange zest to the batter which makes these Madeline so flavorful.

Ingredients:
Large eggs:3
All-purpose flour:1 cup
Unsalted butter:1/2 cup
Vanilla Extract:1 tsp
Orange zest:1 tsp
Salt:1/4 tsp
Baking powder:1/2 tsp
Instructions:
Preheat the oven to 375 degrees F.
1. In a medium bowl, whisk egg and sugar together using an electric mixer on high speed for about 5 minutes.
2. Shift the dry ingredients and add the dry mixture to the egg mixture in three batches. Fold in gently after each flour addition. Finally add the melted butter, orange zest and mix gently for 5 minutes.
3. Place the mixture in a refrigerator for about 30 minutes.
4. Grease the Madeline baking sheet and I normally sprinkle some flour on the greased baking sheet so that the Madeleines come out clean without sticking to the bottom. Scoop out the batter with a spoon on to the baking sheet. Bake for about 10 to 15 minutes. Insert a toothpick inside, Madeline is done if it comes out clean. Let it cool on a rack. Enjoy!
