Stuffed Eggplant with Parmesan

Recently, I got eggplants from the supermarket and they were so fresh that they tempted me to make this recipe. There are a variety of dishes we can make with eggplants. Eggplants are one of my favorite dishes that I always like to have with either veg or non-veg stuffings. Today I am making this recipe with vegetarian stuffing.

INGREDIENTS:

Medium-sized eggplants: 2

Red bell pepper(chopped): 1

Fresh Coriander leaves: 1 tbsp

Tomato(chopped): 1

Parmesan Cheese: 4 tbsp

Salt to taste

Mashed potato: 4

Olive oil: 2 tbsp

Garlic(chopped): 2 tbsp

INSTRUCTIONS:

Preheat the oven to 375 Degree Fahrenheit.

  1. Clean and cut the eggplant into half. Scoop out the pulp in the middle leaving a half-inch thickness inside the eggplant with the help of a spoon or knife. Mix garlic, salt, olive oil and brush the mixture inside the eggplant and bake it for 10 to 15 minutes.
  2. Mix salt to the mashed potato and fill it inside the eggplant evenly. Add onion, red bell pepper, and the coriander leaves to the garlic olive oil mixture and spread on the top of the potato. Finally, sprinkle Parmesan cheese and bake for 10 minutes
