
BLUEBERRY CUPCAKES RECIPE

INGREDIENTS:
– All-purpose flour: 1-1/2 cup
-Granulated Sugar:1 cup
-Large egg: 2
-Unsalted Butter: 1/2 cup
-Baking Powder:1 tsp
-Baking Soda:1/2 tsp
-Vanilla Essence: 2 tsp
-Fresh blueberries : 1cup
-Buttermilk : 1/2 cup
FOR FROSTING:
Heavy Cream:2 cup
Sugar:3 tsp
In an electric mixer cream together heavy cream and sugar until soft peaks formed.
Place the mixture in a piping-bag to make frosting .
For better results keep the cupcakes refrigerated.
DIRECTIONS:
- Preheat the oven to 350 degrees F(175 degrees C).
- Mix the baking powder, the baking soda and the all-purpose flour all together and sift.
Set aside in a bowl. - Mix butter and sugar in an electric mixer for about 5 minutes.
Add in vanilla extract, one egg at a time. Add the dry ingredients to the mixture and finally
add buttermilk to the batter gradually to create a smooth batter. Mix for another 10 minutes.
Fold in blueberries to the batter.
4.Transfer the batter to the greased cupcake pan and cook for about 25 minutes in the oven.
5.Bake until the toothpick inserted in the middle comes out clean .
6.Leave the cupcakes to cool on a rack.
