
Omelets are like a must-have in any breakfast table. With a little twist, I made this veggie omelet for breakfast with fresh spinach, tomato, mushroom, and onion. They taste really good and takes very little time.

Ingredients:
Large eggs: 2
Fresh spinach:1/4 cup
Mushroom: 1/4 cup
Medium tomato chopped:1/4 cup
Onion chopped: 1/4 cup
Salt:1/8 tsp
Ground black pepper: 1/8 tsp
Olive oil: 2 tsp
Instructions:
- In a medium bowl whisk eggs, salt for 2 minutes and mix all the ingredients except black pepper.
- Heat oil in a saucepan, set it to medium heat and pour the egg mixture into the pan. Spread the veggies evenly and flip the sides once its golden yellow.
- Transfer the omelet to a serving plate and sprinkle black pepper on the top. Enjoy!
