
Today, I am making this Banana Cake with a lemon glaze which tastes so good with a mix of sour and sweet at the same time. I like the lemon flavor but you can add any flavor your choice.

Serving size:8 to 10
INGREDIENTS:
All-purpose flour: 1 1/2 cup
Granulated sugar: 1/2 cup
Vanilla essence: 1 tsp
Ripen banana: 2
Large eggs: 2
Unsalted butter: 1/2 cup
Baking powder/Soda: 1/2 tsp each
GLAZE:
Confectioner sugar:2 cups
Lemon juice:3 to 4 tsp
INSTRUCTIONS:
Preheat the oven to 350 degrees F.
- Shift together all-purpose flour, baking powder/soda and keep it aside.
- In a medium bowl mix butter and sugar using an electric mixer for about five minutes. Add Vanilla essence and eggs one at a time and mix all-purpose flour in two batches for about 5 minutes. Finally add partially mashed banana to the mixture and fold in gently. We don’t want the banana to be completely mashed.
- Grease a baking pan and place the flour mix and bake for about 15 to 20 minutes. Let it cool for 5 minutes. For the glaze add lemon juice and sugar and stir for 2 minutes and apply on top of the cake. Place it in the refrigerator for 10 minutes and Enjoy!
